What Cuts Are in a Half Beef?
It can be hard to visualize 200lbs of meat. This is a photo of a 100lb mixed quarter of beef - a half beef would be double this amount.
In a standard cut half beef 100lbs is divided between steak cuts and 20 – 4lb roasts. The rest is soup bones, 20lbs of stewing beef and ~80lbs of ground beef.
Roasts you can expect to receive in a standard cut include: cross rib, blade, steak (rump) roast, prime rib, sirloin tip.
Steak cuts you can expect to receive in a standard cut include: T-bone, sirloin, tenderloin, round.
In a standard cut, ground beef and stew beef are in 1lb packages. Bones can be requested if you like making soup or have animals who love them.
How much space will I need in my freezer?
A rule of thumb is one cubic foot of freezer space for each 25-35 pounds of cut and wrapped meat. For a half beef, you will require 8-9 cubic feet of freezer space. A milk crate is 1 cubic foot to give you a better visualization.

To Note: While this is the current price for our September and November beef pre-orders, market volatility, which doesn't just affect market value of livestock, but also the general inputs and overhead on the farm, may impact pricing. If any changes occur, we will notify you at least 30 days in advance with the chance to modify your order. We appreciate your understanding and continued support of our farm!
